lemon drizzle cake2

I was extremely pleased with the way this lemon drizzle turned out. It was yum, it was fresh and it was tangy. I’ve had many people ask me the recipe to it on the various forums that I am a part of, so here it is.

I hope you enjoy making it as much as I did.


The Recipe


100 g butter
175 g caster sugar
2 eggs lightly beaten
175 g flour
1 tbsp baking powder
4tbsp milk
Grated rind of lemon
For syrup
4 tbsp icing powder
3 tbsp lemon juice


Cream the butter and sugar until light and fluffy. Add eggs gradually then add the flour, milk and lemon rind and mix till soft consistency.

Spoon into greased tin and bake in preheated oven at 180c for about 40 mins. (I kept mine for 25 mins as was using a wider flatter tin)

Mix together the icing sugar and lemon juice. Poke small holes using toothpick into cake. Pour mix into cake. Leave to cool. Dust a little icing sugar for finishing.
